Sweet Mission Santiago Campa is an unyielding perfectionist in his Donut Bar kitchen D ONUT BAR CHEF AND OWNER Santiago Campa has smilingly persuaded me to try his Big Poppa Tart. is cartoonishly oversized dessert weighs about a pound. Technically, it's a donut. More specifically, it's an icing-covered pastry with a Pop-Tart inside. Noshing on a Big Poppa Tart can induce an out-of-body sugar high. Finishing one is a two-person job. Or, requires two seatings by one person, with time out in between for a jog and a nap. Campa is wearing a white chef 's coat and black-and-white- checkered pants while we chat after a weekday breakfast rush.
