Salad Ingredients • ½ head green cabbage, finely chopped • ½ head red cabbage, finely chopped • 2 carrots, shredded • 1 green apple, cored and small diced • 3 cups kale, shredded or chopped • ½ cup golden raisins • ½ cup dried cherries • ½ cup pepitas (pumpkin seeds) • ½ cup sunflower seeds • ¾ cup grated Parmesan cheese Maple-Dijon Dressing • ½ cup apple cider vinegar • 3 Tbsp Dijon mustard • 2 Tbsp maple syrup • ½ tsp salt • ¾ cup extra-virgin olive oil • 1 garlic clove, minced • Pinch black pepper Instructions 1. Make the dressing and prep the kale: Place all dressing ingredients in a glass jar and shake well. Place the kale in a large bowl. Add about 1 tablespoon of dressing and massage the leaves with your hands for 2–3 minutes until soft and tender. 2. Combine salad ingredients: Add the chopped green and red cabbage, shredded carrots, diced apple, raisins, dried cherries, pepitas, sunflower seeds, and Parmesan to the bowl. 3. Dress the salad: Start by adding about half of the remaining dressing. Toss everything together, taste, and gradually add more dressing until the salad reaches your preferred flavor and texture. 4. Serve or store: Enjoy immediately, or cover and refrigerate. Flavors deepen overnight, making this salad even more delicious the next day.
