Creative cocktails include the "Smoke," a concoction of San Matías Blanco Tequila, home-infused mango ginger beer, Ancho Reyes liqueur, homemade ancho chili bitters, and lime. At Arbol, a sumptuous breakfast buffet includes such regional specialties as chilaquiles, huevos rancheros, and tortillas made to order on an outdoor grill. My favorite dinner entrée was a whole grilled red snapper, but other tasty options include corn infladita, lobster tamal, and braised short ribs. Families will like the casual, poolside Paleta for pizza, poke, tacos, and burgers. Codex, the resort's fine dining restaurant and lounge, offers an intimate beachside setting with tables on the sand or terrace, and a taste of Mexico's diverse regions. Inspired by the ancient Aztec book of herbs, selections include small plates, entrées such as crispy soft-shell crab or barbecued lamb, festive cocktails, and a curated wine list. Book a private beach barbecue with 48 hours' notice. Fishermen from the nearby village of La Cruz Huanacaxtle will deliver fresh pescado, which the resort chef prepares in the traditional zarandeado style: split, marinated, and grilled. Just add a cerveza or two.
